Rachel Zoe’s Gluten Free Chocolate Chip Banana Bread

Ingredients:

  • 5 tbsp unsalted butter or coconut oil
  • ½ cup of honey
  • 5 (medium sized) ripe bananas, mashed
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups of gluten free flour
  • 1 tsp of cinnamon
  • ½ cup chocolate chips or nuts or both

Preheat oven to 350 degrees.

Grease loaf pan with butter or line with parchment paper.

Add softened butter to a large mixing bowl. Add honey and mashed bananas and whisk together. Whisk in the eggs.

Add baking soda, salt, cinnamon, and vanilla to bowl; whisk together well. Add flour and mix only until combined; DO NOT OVERMIX.

Add chocolate chips or nuts in gently.

Pour mixture into pan and bake for 55 - 65 minutes. Check progress at 30-35 mins and loosely cover with foil until finished.
