Camila McConaughey is a force—lifestyle expert, entrepreneur, mother, Women of Today founder and co-founder of the Just Keep Livin Foundation. No matter her role, Camila’s greatest joy is helping others. Growing up in Brazil and traveling all over the world, Camila finds beauty in culture and recognizes the importance of community. Her website, Women of Today, offers an online community for all, sharing recipes, health and fitness resources, and lifestyle advice. Another passion of Camila’s is cooking her favorite Brazilian dishes for her family. Even her kids get involved making smoothies, eggs and meat sauce from scratch! Camila has a heart of gold and I know that you will be inspired by her story!

Camila’s No Mayo Coleslaw

ingredients:

  • 1 green cabbage
  • 1 large red apple, julienned or thin sliced (I use Granny Smith)
  • ½ or ¼ red red onion, thinly sliced (the amount depends on the size of your cabbage)
  • 3 tbsp coarsely chopped mint
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tsp apple cider vinegar
  • 1-2 tsp white wine vinegar
  • salt to taste

Finely shred the cabbage using a mandoline. If you don’t have one, use a sharp knife and shred as fine as you can! The thinner the cabbage, the better this will taste.

Combine all other ingredients and mix together in a large bowl. Taste it as you go to see if it needs any more acidity, moisture or salt.

Can be served right away or it gets better the next day!
