Successful on and off the field, Erin is the co-host of ABC’s Dancing with the Stars, and the founder of Wear by Erin Andrews, an NFL apparel line created for women who want to wear their favorite team apparel without sacrificing style. At home, Erin has been trying to improve her kitchen skills, mastering meals made with the easy-to-use instant pot and a nonstick griddle. Erin is ambitious and vulnerable and utterly hilarious! Inspired by Erin’s love of her Instant Pot, these easy-to-make brownies are the perfect treat to make when you’re short on time!
Instant Pot Oreo Brownies
Ingredients:
- 3 tablespoons unsalted butter + more for greasing
- ½ cup sugar
- 1 teaspoon pure vanilla extract
- pinch fine sea salt
- ¼ cup all-purpose flour
- 3 ounces bittersweet chocolate, chopped
- 1 large egg
- 5 Oreos, crushed + more for topping
Generously butter the bottom and sides of a 6-inch round pan. Place 1 ½ cups of water in Instant Pot. Set aside.
In a small bowl, combine the sugar and salt.
In a medium microwave-safe bowl, microwave the butter and chocolate on high for 2 to 3 minutes, stopping every 45 seconds to stir until melted and smooth. Stir in the sugar mixture until blended. Whisk in the eggs one at a time until fully incorporated, then whisk in the flour and vanilla until the mixture is smooth and glossy.
Pour the batter into the prepared pan and cover very tightly with tin foil. This will prevent any moisture from getting into the brownies. Place the brownies onto the Instant Pot trivet. Place the trivet inside of the Instant Pot and set to high pressure cook for 25 minutes. Lock the lid and cook. When Instant Pot is done, allow the steam to release. Use oven mitts to carefully lift the trivet out--careful it will be hot! Uncover the brownies and allow to cool before drizzling with chocolate sauce and crumbled Oreos. We recommend topping with a scoop of vanilla ice cream for the ultimate a la mode treat!
